Fresh cherries are rinsed and dried on raised beds for two to three days to remove excess moisture before being placed into custom-designed, 40-gallon “coffee tumblers” for fermentation. These tumblers, engineered to rotate for even fermentation and easy unloading, are then inoculated with koji (Aspergillus oryzae), a microorganism traditionally used in Japanese cuisine to aid fermentation and enhance flavor.
