From Jose Lizardo Alba’s Finca Los Jazmines, this Pink Bourbon was hand-picked and sorted, then de-pulped and fermented anaerobically for around 76 hours. After washing, the beans are dried in a greenhouse for 18 to 20 days to promote slow, even drying. Lizardo’s meticulous work in post-harvest processing pays off in a remarkably sweet, clean, and complex coffee with bright acidity and notes of tropical fruit, citrus, and jasmine.
